Petroselinic acid is found at uniquely high concentrations in coriander (50-90% of fixed oil) compared to all other common foods. In vitro and animal studies confirm anti-inflammatory activity through multiple arachidonic acid pathway interactions. The compound's distinct n-12 positional geometry compared to common oleic acid (n-9) confers unique enzymatic interactions. Human clinical data as an isolated compound is very limited; mechanistic evidence is primarily from in vitro lipid biology studies.
